While you are correct that records only began relatively recently, they are not the only source of data ... ice cores and tree rings etc ...
As for the OT, its great on two counts. (1) As the costs of importing goes up, the value of home grown goes up. At the moment many common species cannot be given away. (2) Transporting fish around the world not only results in many casualties, but it simply isn't a sensible way of using a finite resource.
