Would this be a safe combination of fish together? 3 Cory Cats, 2 ADF and 1 male betta? Or would the betta mess with them too much?

Really depends of the individual bettas temperament.

I have kept a betta, cories and ADF's together before without problems, but like I say, each betta has its own temperament. Some will be fine whereas others will not tolerate any other fish in the tank.

I'd recommend you put a min of 6 corys together to get more natural behaviour, if the tank isnt big enough for 6 than have a look at the smaller pygmy cory species.

For a school of 6 non-dwarf corys that reach 2-3 inches, I'd like to see them in at lest 15 imperial gallons.

For pygmys, 6 in a 6-10 gallon with a decent footprint should be fine.
 
ADF's are great little things - try and feed them by hand or tweezers, as the betta is likely to eat all their bloodworm before the frogs can smell it as their eyesight isn't that good.
