I feed once a day and only 6 days a week.

If they are leaving food then yes they are being over fed. It's not true of all fish, but your fish are perfectly good community fish.
They don't need to be weaned onto things such as pellets, flake and frozen food, so if they're leaving it then it's purely cause they aren't hungry.

I would cut the feeding regime down to once a day 7 days a week and go from there.

What exctly are they being fed?

As curiousity said, feed once a day, just enough for what they can eat in about 2 mins. You can also miss a day each week (I dont feed on sundays) which help keep your tank that little bit cleaner

Your water stats look remarkably good considering you havent done any water changes, I'm abit suprised you're seeing nitrITE at this stage as I'm guessing the cycle is just starting to kick in.

Does your filter have zeolite in it?

Along with the substrate filter..

The main filter is a 3stage biological filter. Containing
AQUACLEAR 50 BIOMAX
AQUACLEAR 50 CARBON
AQUACLEAR 50 FOAM

That all looks fine, although you dont need the carbon in there. Carbon is only used to remove medications / colour tannins from the water and is only effective for 3/4 days. In the long run you'd prob be better replacing the carbon for another foam pad.

Anyway, I'm just surprised the ammonia hasnt risen higher than it is considering the time the fish have been in there, not that its a bad thing lol

Honestly so am I... I didn't expect it to go this smoothly
The kit that i bought from my LFS just great along with the manual and help that they provded so I do owe them a lot of credit for helping me get this setup.

Its very exciting sitting watching my fish swim (ahah don't hear that from very many people)
My girlfriend is getting kind of annoyed with me cause I pay more attention to them then her AHA!

I'm going to give it a couple months and as long as I feel that the maintenance is not too much a strain I'll probably be purchases a much large longer tank to line the wall of my computer room. Either going to make a salter water coral tank or another freshwater .. sand / life plant tank. Very exciting
