When a message is deleted from a phone, the block of data is not deleted, just a tag to show that is' now free to be used again.

Depending on you phone.
If you create several very long text's, copy them and create copies of them untill the internal memory is full, then select all and delete you have just cleared everything. Now all that can be recovered is the copy's u just created.
Any memory cards remove and replace with a blank.

Course the police have to take the phone away to do this, the most they can do on site is copy text and phone call logs physically on the phone.
