How Many? Help, Please!

Remember if you get lots of different coloured mollies, they will interbreed and in the end you'll have a load of dull mongrel mollies. There are so many fish out there, I would encourage you to look at other options before diving in - but then I am not really a fan of livebearers.

You do know that true shortfins are only Poecilia Sphenops which are all black unless they are a hybrid in which case they will get slightly bigger than Poecilia Sphenops should. Black Mollies should max out at 2" which would give you a max of about 64(complete maximum!) but if they are hybrids or another species then... You'll have to get back to me.
Your most common choices are;
Poecilia Sphenops
Poecilia Latipinna
Poecilia Mexicana
Poecilia Velifera
Poecilia Salvatoris

How would I get bright and colorful fry all the time?

General mollies that you find in the store would be a good option. They can reach any size between 2" and 5" though so don't go over 40 max and see how you go from there :)

What do you think would be a good max stock for a 75 gal Molly tank?

How many Balloon Belly Mollies could I stock into a 75 gal?

And can I stock different species? Like, can I stock BB Mollies, Lyretail Mollies, Shortfin Mollies, and Sailfin Mollies in the same  tank?

If you are going just mollies? I don't know really, depends on how big the mollies get. Like I say, some of the "common" or "general" mollies that you find in the store are good but will vary in size from 2" all the way up to 5" so the max stocking level will differ.

Sailfin get to 6" long, Balloon Molies will cross breed which is not good for the molly species, Lyretail and Shortfin, yeah. They'll cross breed but it wouldn't do much, if any, damage to the fish :)

You can't guarantee bright fry, as there is no way to stop them crossbreeding unfortunately.

Erm, they are just good at cleaning up the odd dead fish they get

No-one can say that there is a single fish store anywhere that does not get any dead fish. Even the best stores will get dead fish every now and then, you cannot say they don't.

i never said anywhere that they dont "get any dead fish".....would you like to please show me where i did?

i said they keep thier tanks very healthy,

thier percentage of dead fish is extremely low (less than 2% to be exact) my brother in law is the manager of the store.....and that is pretty impressive for a store with over 200 overstocked tanks

In my experience even Poecilia Sphenops usually make around 4 inches when fully grown

Only crosses, pure Black Mollies(Poecilia Sphenops) only get to 2" I had a Poecilia Sphenops x Poecilia Latipinna that was only 3" long when fully grown. Which is strange because Latipinna alone reach 6"(sailfin mollies) so if she was a cross between the 2 and Poecilia Sphenops do reach 4" when fully grown then she should have been at least that but she wasn't. My partner used to breed Poecilia Sphenops in both freshwater and saltwater(they ate algae and his Radiata Lionfish ate the baby mollies) and even then they only reached 2".

As I understand it, the only different species in that list is the Sailfin.

Ballon mollies are the same "species" as standard mollies, but they've been selectively bred. Likewise lyretails have been selectively bred. And I say "species" in inverted commas, as has been said, they're all mostly hybrids of various species anyway.

And they will all interbreed.
