Only you know for sure what will work. There are some great ideas here, mostly focused on the typical stereotypes (which are often true). While all these things are good, my wife appreciates things a lot more if I do things for her family rather than her. So involving her family is the right way to go, whereas if you try involving all my family, most of the time I will hate it, but on occasion it's great.

You say you do the romantic stuff quite often, so try the fun stuff for something different. Stuff like zorbing, or driving a nice car round a track, or buying a microlighting experience for her. Or take her and her family to the zoo for the day, which may end up with the bonus of her family paying for it (while still earning you points because you're prepared to pay and it was your idea). Take a look through the experience days you can buy and see if there's anything she would enjoy.

Try and link things to her hobbies, say she enjoyed singing, you could book a day in a studio to get a pro recording of her singing. That kind of thing.
 
But obviously not by just sitting in front of her and saying it........how do I show her just how much she means to me?

Why don't you make her a nice three course meal, dedicate the night to her, or take her out for a nice meal to where she likes.

For our 3rd anniversary my boyfriend made me a nice 3 course meal; it was nachos to start, crab cakes for main and sticky toffee pudding to finish....it may not be much to anyone else....but I LOVE nachos, I love fish (he hates it; but he made it for me which was really good) and sticky toffee pudding is one of my two favourite deserts. The menu was for me; he'd thougt about it and picked something I'd like. The night was all about me and it made me feel special :) (oh and it was a suprise).
 
For my first anniversary I arranged for my mum to look after our daughter, booked a hotel on the coast, and I drove down while she slept in the car.

I'm trying to sort my passport out so I can arrange a weekend in Paris for our next anniverary.
