About 3 weeks ago we brought 5 females and 3 male guppys, today we noticed 2 fry swimming around, one white/see through and the other black.
How do we know if they are male or female ?

Also is there anything that we can do so they don't die soon or get eaten ?
 
Hello :) depends on how old they are and their size.
Fry living with adults is at the risk of being eaten.

You can't sex the babies until they are nearly full grown, which can be anywhere between 3-8 months depending on how fast they grow.

You can buy breeding nets from pet shops or online. These hang on the inside of the aquarium and have a fine mesh net that allows water to flow through them. The baby fish are scooped out with a small plastic container and put into the net. When they are bigger, they can go in with the adults.

If you have lots of plants in the tank, the babies will have more places to hide and more will survive. Water Sprite (Ceratopteris thalictroides/ cornuta) is a good plant for guppies. It floats on the surface and grows rapidly. It can also be planted in the gravel.

the females will develop a small gravid spot when they are growing
 
for now, both will look like females. you will be able to properly sex them once they’re full grown.
 
Male fry will develop a gonopodium when they reach maturity. Until then, as the others have said, they will all look female.
 
One can start to sort genders since they've reached 5-6 weeks old. In addition to the gonopodium males show more vivid colours than females.
 
What I have noticed over the generations of my gupps is that the females show the gravid spot before the males develop gono

He does not have a Gono yet but I assure u guys it isn’t. A Gravid spot just his coloring. It isn’t dark like his sisters
