I bought 3 peacock gudgeons last week for my tank, they're alone in there so I have no worries about them being abused by another tankmate (at least one of a separate species) but they all seem to be quite reclusive. They'll hide under the rockwork and plants and only move if they have to, I'm hoping that they come out to eat as I put food in and leave the room so they will not feel threatened by my presence.

Basically I'm wondering if this is normal behavior for this species or if maybe there is something wrong, I do realise that they could still be adjusting to the new surroundings but just thought I'd ask.

Any insight would be helpful. As I couldn't find any info on thi type of behavior before.

IMO, they are probably still hiding because they are new. Try feeding them frozen foods, live brine shrimp may coax them out :)
 
Mine were very shy when I first got them. Sadly, lost three while I was on holiday, don't know what happened there, but the fourth is still with me and not at all shy. She shares with my guppy fry and comes up and eats almost from my hand.
 
Yeah, probably still just stressed from the move.
Mine were not all shy. Swam right up to me and looked me straight in the eyes.
I moved them once to another tank and didn't see them at all for an entire week. I thought them dead until suddenly one morning they were eyeing me again. :)

Give 'em some time, feed 'em live foods like Dwarfs suggested. Once they get adjusted you'll love 'em.
