The amount of gravel will determine how often you need to stick your hand in and give it a good cleaning, anything more than 1" is purely decorative and has no advantage except looking good. You will increase the chance of anerobic areas which will release poisonous toxins when disturbed and food, rotting plants etc etc will build up creating an unhealthy tank.
So, if your prepared to clean it minimum twice a week, preferably every other day, then you should be ok.
About 2" max for good planting is the most you will ever need.

My fish are good decorators they will move the gravel any way they want. LoL i use about 1 inch of gravel and i add gravel to all the plants so thers a small mount at the plant bases.
