What would be overdoing the garlic i decided to use real garlic mince it up and soak it with the food for a couple of hours i'm using frozen food. Also will the garlic heart corals or do corals mind.

First why are you using garlic? Marine animals are not exposed to garlic in their natural environment so it seems odd to me. I have read about using garlic in food to help rid ich, is this the case?

With FW fish garlic is used to improve appetite, think this is the case here.

I add real garlic to my food without any side effects
Cuts down on the fish odor a bit too.
All I know is all my creatures go nuts over it.

That makes no sense. If the fish aren't eating, why would you try to feed them something that they have never encountered before or would never encounter in the wild? What about effects on the fish, since they do not have the digestive system that can process foods that we eat, like garlic. It just has never made sense to me, and i haven't ever heard of this helping matters. Any ideas of the long term effects on the fish or corals? Just something i would not do.

Im not sure how it works but it does have a positive effect on fighting parasite (perhaps it makes the fish taste bad :p )

It seems to have some strength to the argument also as a few household marine names actually produce bottles of the stuff as additives to the tank (Kent Garlic Additive for one).

As an educated guess i would say that its strong esence will make increase the fishes feeding responce and in doing so, increases their immune system.

I don't know, maybe it works though as lots of reputed fish food makers add it to thier food. I am no expert, I was just saying that they do and, It seems to work as shown by previous posts.

Garlic is just vegetable matter much like seaweed or other plant life.

My corals don't seem to suffer from it at all. I believe they must be selective enough to filter it out.

garlic like all plants evolved to kill bugs, but garlic has substances that can last within the body so it transfers its properties to us, just like the spanish dancer and the cnidarians it eats.

Well if it evolved to kill things, i really don't want to add it to my tank.

Its like adding anything eles to your tank, you just need to add the correct amount. If you dont over do it, the fish are fine. And in this case do quite well and are less prone to getting diseased.
