I know you've already said it's not a goby or gudgeon but I keep coming back to chinese sleeper!

Not a Goby/Sleeper or Gudgeon. 
 
They do vary in colour from male to female(only during breeding season though) and between moods :)
 
Still looks like a sleeper to me :p lol

Well since you have the right family both of you it's Cottus gobio - The European Bullhead :) I had 5 of them. 3 females and two males. Originally started with 6 but one of the males took a dislike to the small female and ate her :/
