if you know the name of the fish in question, scientific or some of the trade names here is a pretty good reference.

some species of mbuna have a male/female color variation. the males coloration will be brighter in color, while the females are duller. the ones with the color variation are born with the female coloration. this is referred to as their juvenile colors. as the fish grows it will become an age where it sexually matures. at this age the males will shed their female colors and take on the male coloration. the time that a male will sexually mature may vary due to temp, water conditions, environment etc...

species without the color variance are vented to determine their sex. venting needs to be practiced to have the sex determined. to vent the fish is netted and keeping your hands wet at all times the fish's underside is exposed. in the anal region of the fish are two small holes. in the males the holes will be perfectly round. the females will have one round and one oval hole.

as far as fins growing back, usually if the damage is not into the base of the fin they will eventually grow back.
