does anyone know of a way to get electronic probes that analyze certain substances in your water such as ph, hardness, ammonia, nitrite, nitrate, chlorine levels in your aquarium then a way to route it to your computer?
 
Look towards reef computers. They will allow you to check on pH, KH and nitrate (as well as other things like ORP, calcium levels and such) though you will need to calibrate them quite often to be sure of the readings.

Chlorine, ammonia and nitrite shouldn't be present on a tank set up for any time, and I don't recall seeing any probes for them.
