If I wanted to add peat to the filter where would it go? I've got 2 baskets, 1 full of ehfimech the other with ehfisubstrat. I know Eheim make ehfitorf but I can't find out whether I can use it in my filter or not.

yes you can use it in your filter
if it was me I'd remove half the effimech and replace it with the peat
