Sometimes even Female/Female works well, depends on if the 2 were brought up from fry together.
 
What size tank? If it's large enough, you might be surprised to know that I'd go for male/male. Male female will inevitably mean the female is stressed out. With two males and no females, the two should simply establish territories at opposite ends of the tank (all things being equal) and leave each other alone (except perhaps during feeding times). Getting 2 females is even better but I doubt you'd want to do that considering how much duller they are in color. Can you not fit a trio in your tank BTW (1 male, 2 females)? That's by far the best option.

If not, have you thought about getting honey gouramies instead? They are a little smaller and hardier so a trio would be a good replacement for 2 dwarf gouramies.
 
Go careful if you are going M/F....

Ive had a few "territorial" issues with my two... The male constantly chasing the female all over the tank!!!...
 
Am I the only person in the world who thinks female gouramis are beautiful, with their silver colouration and subtle hints of coloured stripes? And yet the world is full of people who admire silver dollars. Why? They look a lot duller to me.

We have a male and female blood red gourami. The male is red and blue, the female a gold/silver colour and I adore her. I know she's not as colourful as other fish but I've become quite attached to her.
 
I don't admire the colors of female gouramies as I do the colors of males - I simply have an entirely different standard for judging the females - I think they are wonderful because of their character. They are calmer and more social than males and can also be more active in the sense that, because of their lack of territoriality, they'll explore the whole tank. They also have beautiful fins, IMO. Sometimes I preffer their 'spiked' dorsals more than their male counterparts' 'bulbous' fins as well. From a purely aesthetic point of view, however, males are more impressive in a community tank than females (IMO) but females are often more interesting to watch for long periods of time and are far more 'individual' in character.

edit: I should add that, though I agree that female dwarfs are over-looked, it isn't fair to compair them with silver dollars (arguably IMO). For one, silver dollars don't have a colorful counterpart! They also are much larger and have an entirely different appeal - one not so largely based around their color/pattern and more to do with their size, schooling behaviour etc.
