I have it in a freshwater setup, I know I know this is a no no, it needs brackish water.

It's missing though. It's been missing for around 2) I had thought it might have died, but I ruled this out because the water chemistry hasnt changed any. So I'm left with just two things either it escaped or is under my UGF plate.

Which do you think it is.
 
Is your UGF air driven or powerhead driven.
If air driven I would suspect that, if powerhead driven, they are consummate escape artists and unfortunately I would look at the back of your tank.

It uses an air pump. But if it had jumped out and died wouldn't I have smelled it?
 
They like hidey holes, if you have open piping leading to your UGF, it will have gone down there
You will not necessarily smell them, years ago our Mbu puffer jumped out and was behind the tank for a couple of weeks and we didnt locate it from smell, only while doing maintenance

im betting its jumped out check the whole room floor behind everything.
when mine jumped out i found it 8 feet away from the tank it was still alive incredibly
