Do you have any males?
In all seriousness ...

Will females (C. aeneus) lay eggs without males present? - Perhaps I should look closer when they are spawning to ensure that they are doing the T maneuver.

I have heard that females will lay eggs without males present, yes. Might be that your male(s) is/are infertile 🤷🏻‍♂️

What are you feeding them?

Hikari Pellets, Bugbites, Frozen: Brine Shrimp, SF Frenzy, Daphnia (Varied occasional treat)

I have six total in the shoal

The live food definitely gets my peppered lot frisky. I used to feed microworms when i had a culture setup. They'd be at it every morning. Do you have room for anymore? Maybe try and see if your lfs can identify and catch a couple of males?

There is room at the (125 gal) inn!

I picked up 2 aeneus (for a total of 6) the other day at a new (to me) lfs, that was all they had and they looked lonely, I would like at least 2 more. I have 4 C. Paleatus that I want to increase shoal size to 8. Aside from that I have 9 Black Skirt Tetras and 6 Buenos Aires Tetras.

They've been in short supply locally
I'd also like to change my substrate to sand prior to stocking up to minimize stress with moving to a tub during changeout.

Well it's fantastic that the females are showing signs of spawning at least, once the males sort themselves out you wont be needing to buy any! Can you change some of the substrate a bit at a time? Or just have an area of sand at one end of the tank?

I'm considering that, maybe have a beach at one end, and slowly change it over to 100% sand. They seem to do ok with the round gravel with no obvious barbel erosion or other injury (they love to graze the substrate), but I would like to have a proper environment.

Don't minimize your contribution. They breed like bunnies for you, but not everyone has the same luck (or skill). A lot of people would love to breed their Corys, and get nowhere with that.
I don't do anything special for them to breed like bunnies

Bottled mineral water, 45-50% water changes weekly, internal filtration serviced on a regular basis, UV on at night time, different food every day - with two fasting days, silicone plants, real moss balls, pebbles and sandy substrate. Light are on from 0500 til 1400 6 days a week, off completely for one day a week.

They splatter the glass and plants on a daily basis with eggs, they seem happy little sausages...but there is nothing special with how I keep them

Them's fighting words - let's have an old fashioned internet flame war about how I think you're a really good aquarist to pull this off. First off, few aquarists actually do water changes like that. They intend to sometimes, but that's a lot, and if you have to use bottled water instead of tap, that's not convenient.
UV is a neat idea in there - not commonly done. I'm stealing that the next time I decide to breed Corys.
You're covering the two main bases in my fishkeeping experience : water changes and variety of nutrition. Again, how many aquarists here follow the basic idea of rotating foods? I fast all my fish one day per week, and find the addition of live foods important, but while Corys like the arrival of white worms, variety is the key. The 2 day a week approach is interesting, as are the results you're getting.

You don't want to run around bragging and self-promoting, but you deserve to give yourself a pat on the back, or buy yourself a new hat (or a pint). All the seemingly small things you do should be common sense, but they're uncommon for that reason.

Right, it's a fight. I forgot. Look here, buddy. You can give good advice and help people with their Corys, okay?
