I've always wanted a Cray fish would it be one to mix them with my south american cichlids?

Pincers and fish don't go together.

Crays are best kept in a species only set up; they will eat your fish eventually.

I'd go along with that advice, tbh.

I was once in one of my local LFS, they had a lovely electric blue lobster in a tank with a lovely blue halfmoon betta. Well, it used to be a lovely halfmoon betta. I guess you'd have to say that this betta was more like a quartermoon, if you catch my drift.

It funny because cichlids are usually killers toward foreign species. Crayfish will most likely kill them. I wouldn't recommend putting crayfish with any fish unless you're okay with them being a tasty snack!

You might be interested in Dwarf crayfish. I have a pair in my community tank and they are perfectly fine and the majority of people agree that that specific kind can go with docile, community fish no problem. The only problem I could see would be the cichlids killing the dwarf crayfish.

I had a red claw crayfish about 2 years so was a nice size. put him in with my SA setup first time he shed one of the cichlids  killed him :( im betting the oscar!
Lesson learned....He was fine by himself!
