Changing Substrate

Hi! I currently have a 110L tank and a 60L tank, the 60L has gravel in that I want to change to sand.
The 110L isnt currently set up and I'm not sure what to do to change the gravel to the sand, I have Kuhlis in there which I think will be almost impossible to catch! And some shrimps that are extremely delicate!

What sand should I use / How would I do it?

argos play sand is fine for use in aquariums.
