Java Moss won't be a good candidate but it would make a really nice moss wall. I'd try posting in the Planted Tank Section. Have you tried bamboo plants?
 
Oops sorry didn't see that your looking for floating plants. Moss balls the one they sell at your lfs will be a good floating plant.
 
Water sprites grow well as floating, and fish like to swim around the roots.
 
+1 with Aqua Tom. Real Marimo moss balls dont float in the tank once they have sunk.
 
Also bamboo plants are not aquatic and will slowly die in the tank.

How about some Amazon frogbit? Nice floating plant.
 
If you are just looking for cover for your fish a lot of the stem rooting plants can be grown as floaters
 
I have some hornwort that I like a lot. Ceratophyllum demersum.
 
+1 for frogbits. Really like mine and have been looking for more since i put them in.
 
Java moss is great when it come to cover for livebearers. I use it extensively in my tanks. I am not sure what the scientific name is for this stuff. This is what it looks like when kept in a nice large clump. Mine is a clump in my guppy tank.
