I have an understocked 200l tank that I'm looking to stock properly in the next few months. Currently has

11 chilli rasbora
15 diamond head tetras
4 red phantom tetras
4 long finned calico bristlenoses (hopefully be 2 soon as 3 males to 1 female is not ideal)
2 black venzualan corys
2 leopard catfish.
1 chinese algae eater (that is looking for a home also)

I know the catfish are an issue with small fish, they have very wide mouths. Currently they are 7yrs old, not sure how long they live.

GH is 1, pH 6.5 to 7.5, Temp 24 -27

I really like small fish and am torn with what to put in the tank. Not sure about the diamond headed tetras as a large school, the phantom tetras can be a bit nippy, but love my chilli rasboras so will deffo get more of them. But something to go with them?

Would like a more natural looking fish to have as my main tank fish.

Are their any plain coloured, natural fish from the amazon that I could consider?

You aren't understocked. That's impossible.

You can be overstocked, but if you stay below the unsafe line, how much stocking you have is your taste and choice. Personally, you are already close to what I would see as the limit for a tank that size. I would lose the middle aged Synodontis and add 6 to 10 more black venezuelan Corys. I'd consider your stocking to be proper now.

Well, proper for the fish. You could get away with another group of tetras or Rasbora types to go with the fish you have, if you want a bustling tank.

The corys are again around 7yrs old, they are all that are left of the original corys from when I set the tank up.

I should clarify what I mean by small fish... rasboras and up to around 2cm are what I classify as small, possibly these are micro sized fish to some.

I don't want a bustling tank but I do want a large amount of one fish, so it will probably be the rasboras.

There are so many different types of cory that I'm a little stuck on what to get currently, I'll have to spend some time looking at our lfs to see what they have.

Once the bristlenoses and the chinese algae eater are rehomed it'll be ready for some new fish hence it'll be a couple of months before I get any more fish. Did have one guy interested in the algae eater but he wouldn't show me any pics of his supposed 1000litre tank and was talking about his herp and invertebrate collection. I know I want to rehome it but it is happy enough where it is and I won't rehome it just so I can get the tank I want. I like my fish to have a good life hence the tiny fish in a reasonable sized tank, they can get some speed up from one end to the other.
