Betta Not Eating?

when my male got sick after breeding he would only eat the black flakes of his tropical fish flake (aquarian) now he is well again he eats anything, his favourite are the little midges that fly in the house at night. Try him on one, the agitation they make on the waters surface should get his attention.
 
He's probably just adjusting...and male bettas make bubble nests (where they keep the female's eggs when breeding) at the top of the tank.  You shouldn't worry about him playing with the bubbles.

Its been at least a month and a half now and he still wont eat the pellets... Oh ^^'' the bubbles were just bubbles on the side of the tank when I did a water change.
 
Every betta has a different personality and preference in terms of food. As stated by others, he may still be adjusting, some bettas take a 3-5 months to fully adjust. Try a different brand of betta food, I would suggest either Omega One or Hikari.
Keep the temperature at a steady 28 degrees C all day and add a bit of aquarium salt. The combination will perk him up and speed up his metabolism.
This may sound cocky, but trust me on this, I know what I'm talking about lol. I've raised and bred over 300 bettas with the past 2 years and currently have a 25+ betta collection, comprised of all import show quality bettas, from Halfmoons, Halfmoon Plakats, Crowntails and even wild caught wild betta species.
I'm carious though, how often are you doing water changes and how much water do you usually take out?
 
I would personally stay away from freeze-dried anything as it is known to cause bloating issues in bettas.  I also don't feed mine flakes as they tend to foul up the water and bettas normally don't care for them as much.  I would try different types of pellets.  Different brands and different sizes to see if he favors a particular one.  You might also want to try soaking the pellet in garlic juice as a lot of people have alot of success with that technique.

Err I do water changes every week. If I had to estimate I'd say I change 25%-50% each time? His heater is on all the time and his water is at the right temperature but he just wont eat. :( I'm starting to think maybe he is sick?? He doesn't look like he has a sickness though. But he could be just adjusting still. I'm just so worried about him..

I tried garlic juice, still spat it out :(.. But everyone is telling me to try a different brand of pellets so I think I'm going to try the hikari.

I see, 25%-50% is overkill on your bio-load, as your tank is a 2.5 gallon. It's a controversial topic which some aquarium enthusiast argue over, but in my opinion a 5 gallon is the bare minimum tank size any betta should be kept in. Reason being, anything under 5 gallons cannot hold a stable bio-load. Thus causing the parameters to fluctuate, in turn stressing the betta or in a worse cause scenario, the betta may be exposed to nitrate or ammonia poisoning. That being said as long as his find aren't rotting/melting you don't need to worry as of yet.
I would suggest only doing 10%-15% water changes for a aquarium of your size. Adding java moss will benefit your betta's health aswell due to it's therapeutic properties, it also filters excess nitrates and ammonia. Try the Hikari pellets, as I'm pretty sure those will work, once he starts eating and adjusts, you may want to buy a 5 gallon setup. Cycle the new 5 gallon with the java moss and media from your current filter for 1 and half weeks. Then transfer your betta over to the newly established 5 gallon.

Hikari is THE BEST brand of fish food around.  Good choice!

I'm still going to try to look. I bought him a different one, seemed better then the stuff I had bought before.. but he wont eat them..
