I put a few peas in a little water and nuke them in the microwave for a few seconds, de-shell them and then just squeeze them between my fingers as I put them in the tank. Peas are a treat for my fish so just once every couple of weeks or so. That's mainly due to the fact that extracting any uneaten bits is a pain as they drift around and under the plants and wood.
I think you'll find that yours will colour-up more as they grow, as long as the water quality is good and they have a varied diet. Some of my fish can look a little 'washed-out' when the light first comes on (and sometimes first thing in the morning). I put this down to brief shock of the sudden changing light conditions and an extension of more obviously visible shock when the 'jump' or dart for cover for a couple of seconds. They soon settle though. I can't say I've noticed particularly with the Barbs but this could be a factor(?).
