Are my guppies eating white clouds?

A 5 gallon tank would be the absolute minimum for a Betta, provided he's in there alone.
Moving your others to your 10 gallon sounds like a good idea.
However...please try to lose the thought of How Many Fish Can I Pack Into A Tank?

The internet is full of suggestions and formula for working out just how many fish a tank could hold, but these NEVER really take into account individual fish needs. Many realise the efficacy of good filters and the benefits of frequent water changes, but this has people believing they can pack a tank.
People can and keep it all very nicely balanced, especially if they know what they're doing. Unfortunately, the higher a tank is stocked, the less 'wriggle-room' you get, if things start to go awry.

I often refer to speed limits. Here in Blighty, the National Speed Limit for many country lanes can be 60mph. That said, it would be suicidal to travel at those speeds, simply because you can. You'll never know what's just around the corner and, at 60, you'll be dead meat, alongside whatever poor soul you just happened to plough into. At 40, you have a chance.
 
Same with shrimp and snails....scavengers aren't picky
I am changing 50% water in the 5 gallon guppy/white cloud tank & the 40 gallon goldgish/guppy tank. Per API test both high on ammonia. I did not test nitrate/nitrites as I’m charging water. I do not know when to retest. I have Jungle Ammonia Clear Fizz Tabs that I never used. Are they any good?

The Petco guy is the one who suggested 5 WC & 2 guppies in the 5 G tank. Seemed reasonable to me at the time. My mistake was not checking params & changing the lovely crystal clear water.

There's lots of great info on the 'Net and even then, the best of them recommend that you research sources other then themselves.

Test 24 hours after a WC. Skip the fizzy things. What water conditioner are you using? (sorry if it's been mentioned already)
 
Changing the water is always the best option. The tablets are okay for emergencies, but you need a proper nitrogen cycle running in your tank, involving the two sets of beneficial bacteria. This should run on its own, without need of chemical intervention.
To add to @Colin_T 's advice, it would help if you tested your tap water, both with and without conditioner. It's important that you know what you have to deal with from your taps. Some waters already come with nitrates and even nitrites and knowing what you have to deal with will help you manage it more effectively.

Yes! I have concluded that re the big box stores. However there is a
family owned Aquarium Shop in town. Think the grandpa established it like 50 years ago & his adult children & grands work there. I saw him once. They appear to know what they’re doing. Bought a lot of plants there yesterday after getting screwed by a eBay plant seller.

When you run out of the AquaSafe, get some Seachem prime or API Tap Water conditioner, better conditioners

Thanks! Will do. Started a written log today & will add this info. I am using a pH meter, not the API solutions. Hoping API sells the solutions I am using separately
