My little female convict all of a sudden seems to have lost her buoyancy - but not in the way most fish do when their swim bladder goes (when they go completely wonky all over). She is still completely upright and balanced, but it just seems if she's not swimming hard to be off the bottom, she just sinks down. She is moving around the tank kind of scooting along on her belly and swimming up and over things when need be, but then falls swiftly back to the bottom on her belly. It's very bizarre, never seen a fish do this before. She is still eating and otherwise seems ok.

Any ideas?

Could she have eaten a pebble? It sounds almost like something is weighing her down.
Otherwise I would say it is another variation of swim bladder illness which is really only a symptom of any number of underlying issues that have caused the problem.
You could try fasting her for a couple of days and then feed her shelled peas incase the issue is being caused by constipation.

I have sand in my tank so a pebble is unlikely... She's in my community tank so can't fast them all for too long unfortunately and it will be hard to get peas to her on the bottom past all the others but I will give it a try...

I currently have a female peppered cory doing the opposite ... she keeps letting her tail float up before pulling it back down. Otherwise her balance is fine so it's not a swim bladder thing. She is one my older girls so I'm thinking age related. No idea on the convict though - just thought I'd say your not alone

Most healthy fish will easily live a couple of weeks without being fed. Fasting the entire tank should not be a problem.
