Question: if you have one amano shrimp in a 20l tank, how long will it take it to generate enough ammonia to poison itself if the filter isn't on?

Really, I don't know, but I think the equasion would have to have in it, if you have surface movement or plants growing. I have a similar although different problem in that my breeding is devoid of fish and only has snails,
and I'm worried there's not enough ammonia to keep the filter cycled.

It may never poison itself if you don't feed it, Assuming it is the only thing in the tank.

But if I don't feed it, it will drop dead. Although unlike fish, I have yet to find any info on how long shrimps can go without food.

If your tank has substrate, light and plants it will feed off the algae growth and dead plant material. If the tank has been set up for roughly 14 days it should have enough algae growth for the shrimp to feed off of. The longer the tank has been up the better. Shrimp don't eat much.

In late July I made a very-nano tank with about 800 ml of water for my office desk: 1 ball of Cladophora, 3 cherry shrimps (< 1 cm each), and 1 few mm snail (too small even to figure what it was: likely a trumpet). I added a microscopic piece of algae wafer, sealed the bowl and let it go: so far they're all fairing well. HOWEVER all the shrimp have lost their colour! Which may not be a good thing, I guess?

That can be due to a change in diet or a change of the colors in their environment.
