So I have made a rough draft of what I have decorated the tank with so far. I like the rock in there. The camera on my phone doesn't do the rock justice.

  But what do you guys think? I am going to plant around all of this. I would really enjoy suggestions on background plants that I can put behind the wood and rock. I want to put dwarf grass under the driftwood and some crypt parva in front of the rock. What would be a good moss for the wood that won't swallow it whole (maybe that's asking too much)? I am just looking for some creative suggestion. This is my baby and I want to do it right. Thanks guys.

Well, your plants should make you happy, but should make the fish happy.
I would put a couple of swords behind the driftwood, and stems around the rocks.
As to moss, well, keep on top of it.

Go for Xmas moss, much prettier in my opinion than java!
 
I would also place some crypts in there, something like Wendtii, Brown and greens to break it up in the mid ground.
 
I would probably not do the Hairgrass under the wood as it may struggle with the lighting being limited there, but definately around the fore ground.
 
If you haven't planted a tank before, try some cabomba caroliana in there as this plant is so easy to grow, and easy to cut and re-plant and gets you ised to the technique of trimming and re-planting plants!
 
I think you need to pick one or the other as your focal point - having both is going to be distracting
