I'm not sure how large they get? Adult shrimp of 1-2 inches should be no problem with a male betta as long as they have plenty of vegetation to pick through and hide in. Plus shrimp dart really quickly, a betta shouldn't be able to catch one. Tiny babies might be eaten, like baby cherry shrimp for example, but adult cherries, Amanos, Ghost and most likely bamboo shrimp should all be fine.
