That's also normal to chase the biggest female (whether that's because she's pregnant, wel fedd or just big) more than others.
Technically, female guppies can become pregnant already at an early age.

Large finned guppies won't do well for long in softer water. Short finned guppies however are more tolerant.
There's a fair range of wild livebearers that occur in softer water. The hard water demand for livebearers is just a general remark.

Yes, some more info could help us to make suggestions on new fish. But also realize that your current mollies will reproduce in there as well... Which makes the number of fish higher at some point.
With your water hardness, I wouldn't go for the gourami and tetras. Livebearers, African cichlids and so on could work with these parameters. But if it's just a 57 liter tank, I wouldn't go for African cichlids either.
An all male livebearer tank can work. Not always, but a hierarchy "can" be...
