Male or female convict?

I'd say female, orange belly, small fins and sloped forehead. Males would have longer fin extensions top and bottom and the forehead could be squarer.

I’m looking at breeding them, I’ve already made arrangements with my 3 local aquatics shops to take them in lol
That’s great you have the arrangement but be prepared for just how many fry and they are such a common fish. Two females would be my choice.
You would be better off breeding Cichlasoma spilurum or C. sajica. They look similar to convicts but are much more peaceful.
A female convict cichlid can have 300+ eggs and they are usually all fertile if there is a male in the tank. They make very good parents and you will end up with thousands of baby fish very quickly. While most shops might take 10 or 20 young, they won't be buying more than that and won't buy them every week.
