Would this be enough filtration for a 60 gallon tank: Fluval 104 Canister Filter and
Fluval 3 Plus Underwater Filter?

I'm not familiar with those filters but the general run is that a filter should process the water at least 5 times per hour so for a 60 gallon, the filter/filters would need to be able to move at least 300 gph.

It really depends on the fish you keep too. If you're only keeping like 1 fish that may due, but if keeping more, then I would change the Fluval 104 for a 404 or atleast an AC500.

I looked those 2 filters up and they would be sufficient, barely. The 104 is rated for 125 gph while the 3 plus is 185 gph. That's 310 gph. As Nethius said, depending on what you plan to put in the tank, they may be fine. If you plan on pushing the stocking limit or having messy fish, they probably won't be enough though. If you're going with mainly small fish like tetras, you're probably ok. Upgrading to a 204 or 304 along with the 3 plus would give you ample filtration to handle a pretty good fish load.
