What's Up With My Ghost Shrimp?

Caught this little guy/girl doing some weird ritual with grains of sand. Anyone ever seen this before?

That's pretty normal behaviour for most types of shrimps.

They eat tiny micronutrients from lots of surfaces, including substrate/sand they can pick up.

Is it eating stuff off the sand then? Is that what the rostrum is for? I always thought their mouths were below that :3

Yes, mine do the same.
 
They have two pairs of claws, one pair to gather food and the other to feed themselves.
 
They are fascinating to watch
