I have room for one more relatively small one.

What would you get?

At 56 gallons, I'd hope you're overfiltering a whole lot to keep those.

I would honestly say I don't think you have any room for any more fish, and I'm quite sure a gold nugget would outgrow that tank.

In my opinion definitely no more space - at least for catfish / bottom dwellers. Even if it's over filtered, it doesn't leave any space for territory. Even with loads of caves. And once those fish start growing, you'll certainly need a larger tank or more tanks.
