Since putting this Amazon sword in my tank about 2 weeks ago the original leaves melted back and I’ve had some nice new leaf growth but does anyone know what this stem is?
 
If the stem is coming from the sword plant, it is a flower spike. If the plant was growing out of water, the flower spike would have white flowers on it. When the flower spike is produced underwater, you get baby plants instead of flowers.

Leave the plants on the spike until they have a decent root system. then they should almost fall off the spike by themselves.

Oh that’s good news then if the top bit grew out the water would I get both results?
