So I am setting up a fifty gallon and was looking up some stuff on the internet for some ideas. How do I set up my tank to sort of look like this? (like what kind of plants to use, etc.)

I'm guessing you mean to look like underwater trees? I have a piece similar to this (just not as good!) in my tank (see sig far right if you can make it out). I just have a piece of wood that's similar shaped to a tree trunk and tied a small piece of christmas moss to the top with fishing line and 6 months later it looks cracking. You can find different types of moss that grow with different effects, there's a moss advertised as "flame moss" which grows upwards and one that grows "weeping". Don't know the legitimacy of these different moss types though, I just like the frond shapes of christmas moss.
 
Wait so If you tie some moss to a piece of driftwood or rock it will grow into it?

Yes they grow little tiny rhizomes at the base of the fronds that 'cling' on to the surface it's growing on, as Tizer said, like ivy/vines. Careful not to pull at it though as it'll come away very easily I have found...
