Simply put:

Ammonia - Chemical produced from the waste of fish crap and biodegraded food. Very toxic.

Nitrites - Chemical produced by beneficial bacteria converting ammonia to nitrites. Less toxic than Ammonia.

Nitrates - Chemical produced by beneficial bacteria converting nitrites to nitrates. Less toxic than nitrites.
