Tiny Crayfish Tank?

I have a 5 gallon tank that is going to be a hydroponics type of setup. My mom want to grow basil, oregano, etc in the kitchen so she has fresh herbs to cook with. The plants will be placed in a styrofoam board, and the roots would hang down about 3 inches into the water. The plants would be the filter and the fish would provide food for the plants. I will most likely use aquatic plant food as well (have to check with the plant shop on that). I have a small DIY sponge filter that I could use if needed.

My questions is can I have some sort of crayfish in this tank? There would only be one. I'm nervous that it would try to destroy the roots of the herbs. Also, what would I feed the crayfish? I know they can eat little fish, but isn't that more of a treat? Would frog pellets work? I have some left over from my ADFs. I also have frozen bloodworms and brine shrimp and betta pellets that are too big for my betta to eat. Would any of these be good for a crayfish, or do they need specific food?
 
Even a Mexican Dwarf Cray (fire shrimp) would need a bigger tank.
There are no cray you can keep in that sized tank. (Ok maybe a few babies)
10 usg is the minimum tank size for all North American cray/crawfish.

I doubt you could get any but Cherax Depressus Orange fingered yabby grow to about 3.5 inches. Even so they need a 10usg tank.

you might need to rethink your stocking, or tank size.
