I would just like to check these readings are ok

Nitrate - less than 5mg
Ammonia - 0.0
PH - 8.0
Nitrite - 0.0 - 0.1 (think there was a slight tinge)

I think all I need is to drop the Ph to 7.0, is that right?

:) I wouldn't mess with the ph. From what I understand, and may I add that I am no expert, once you start, you'll never stop. Every time you do a water change, you will affect the ph, as your tap water (which I'm guessing you used to fill the tank), has the higher ph.

As nightlife said, better to be stable.

That's right, it's better to be stable than a ph that changes all the time. It's the everending changes that stress the fish more than a high ph.
