Tannins in Driftwood

Are tannins only released when submerged into water?
This isn't exactly fish related but there is little information on Mopani(driftwood) being safe for rodents. I am interested to know if tannins would only be released if it was in water or would it release if an animal urinated or chewed the wood?
I can't find much information on tannins and how exactly their released.
Any help or resources would be appreciated:)

Tannins should be no problem to a rodent. Boil the piece then drain the water till it clears.
 
Why exactly would the piece need boiled if it's not being submerged in water? I know you cant remove all the tannins from boiling so I feel like it would be more harmful if you boil it.
 
Mopani wood is not toxic and can be used in terrariums, aquariums, and vivariums.

If you buy a commercial piece, it's been cured and is perfectly safe to use after a good dry brushing.
