So i am going to be starting up a 75gal. Its my biggest take thus far. Is there anything differently i should do as opposed to my 35? Still do 25% water changes per week or every other week or once a month? Pretty much what should i do differently?

my 35 gets a weekly 25% water change, monthly carbon change/filter clean out, and every three months a change 2 of the 6 fine filter pads in the canister filter. I add start right to buckets of water to refill the tank after the water change.

which type of cichlid? Central/South American or African?

Is it the water polishing fine filter wool that you are changing every 3 months or sponges? If it's sponges I'd recommend no longer doing that. There is no need to change filter media (other than the water polishing pads - the wool stuff) unless it is falling apart. This is how mini cycles come about

They wilp be african, either mbunas or something from lake Victoria. And it is the water polishing pads.

ahh that's good then. Just for a moment I thought you'd fallen into the trap of following filter making companies instructions.

I love mbuna's ... I love to try them but my water is too soft for them. I'll be interested to see how this goes. Good luck with it :)
