Something for St Patrick's Day

Not wearing green, but definitely persuaded by the Irish. Here is raising a pint of Guinness and wishing you a Happy Leprechaun Day, and hopefully @Naterjm can join in! Got the steak and kidney pie as well as Shepherd's pie on my menu :) Off to make the Irish soda bread!

I’m not Irish, and I don’t celebrate the holiday.

But it does remind me of one of my favourite meals to cook and eat, corned beef and cabbage.

For the record, I know that meal is not traditionally Irish, but it’s association is what reminds me every year, I will not fall into that debate.

this year, I’m late to the party, and have done up a Corned beef and Cabbage Shepard’s pie, something I picked up from chef John over at food wishes on YouTube.

Ive got a few progress pics, I’ll share below.

but I’ve been super busy, stuck at home with isolation orders from local public health because of a contact in one of my son’s class.

we’ve also been having great weather, so I’ve been all over outdoor projects, now that we’re experiencing a thaw.

anyways, I’ll post pics of the final product, cheers ?

We had our corned beef and potatoes tonight. Never been a big fan of cabbage. Not actually a huge fan of corned beef either. I prefer potroast or smoked brisket. But about once a year, it really hits the spot. It's kind of drizzly and cloudy tonight, so the weather is fitting for the meal.

mine turned out a bit soggy, I added too much stock to the base layers....

but as an avid fan of corned beef and cabbage, this dish has to take its place in the top 5 Meals of all time for me. Aside from a steak and lobster dinner, this would be the other option for a last meal if I were on death row...

I had mixed beans white chicken chili and bread for lunch on thanksgiving. Very delicious. ?
