I have red cherry shrimp and bumble bee shrimp in my tank at the moment; however I am fancying anther species of shrimp in the tank as well. I am wondering what other shrimp could be recommended so that they do NOT interbreed. I don’t really fancy ghost shrimp or amano shrimp; are there any other species of small shrimp that I could get?

Bamboo, Pearl, Vampire. These are much larger than cherry and Bee but they are peaceful and will not harm the dwarf variety. The bamboo and vampire require an established tank with a strong current because they "fan" their food out of the current and need at least a 20 gallon tank because they grow to about 4-5 inches. The pearl shrimp need at least a 5-10 gallon, they grow a bit bigger than an Amano.

If you're looking for a smaller shrimp(1.5-2 inches) you could get a Red Rhino shrimp. No special care needed except clean water(which is the case for practically every shrimp).
