Shedding And Best Cleanup Shrimp?

I had some cherry shrimp in my all-plastic-plants tank where there was quite a bit of dark gren algae and they cleaned it up a treat.
I've recently bought 6 shrimp for another tank. I think they're amano. What needs cleaning up in there is mainly kind of greyish 'stuff' on the bottom, but they're not interested. There was a indian almond leaf in there at first, which they lived on until it was reduced to a skeleton! Since then, I've fed them 2-3 times a week with algae wafers or blanched cougette. I tried hikari shrimp cuisine, but the betta was a bit keen on that!
So, will any shrimp clean that up, or isn't it shrimp food?
Also, I got the dec 27th and already I've had 8 skins, so 2 have shed twice. Is this normal/OK?
