I was aware that wood can discolour the water into a brown colour, problem is I couldn't leave it in a bucket as the wood was too big to fit In, and was a great inconvenience to leave in bath for a few weeks...

Eventually does the wood stop turning the water brown after time and water changes or will it just keep going on and on....

It will stop eventually though how long that'll be is anyone's guess

It will stop turning the water brown eventually, depending on the amount and volume of water changes your looking at about 6-8 weeks.

I've had redmoor leech for much longer than 8 weeks even after soaking it in buckets of hot water luckily I don't mind the blackwater look & neither do the fish

You can actually get a blackwater extract that intentionally turns the water a brownish colour which some people like.
