I agree with @Essjay post above. I will just mention that if you can bypass the softener, and depending what the GH of the water actually is (don't think we know this yet??), the nitrate issue can be resolved with filtration. @AbbeysDad has dealt with this problem successfully, and there are a couple of articles on his blog:



Of course, as essjay said, if RO is needed for the GH issue, it will also deal with reducing nitrates.
