Will Amazon sword plants pull the same amount of nitrates out of the water if planted in sand as opposed to a larger pebble gravel?

Yes, but they don't use as much ammonia, nitrite or nitrate as floating plants do. If you have a problem with nitrates, add some floating plants like Water Sprite or Duckweed.
