You need 20x turn over so multiply 125 by 20 then you need to have x amount of powerheads to achieve That flow.

My tank is 128L and I have a 900lph ph, a 3000lph ph and the stock pump is 720lph which gives me roughly 36x T/O.

1 x 3000lph will do it for your tank but you'd be better off having 2 x 1500 lph powerheads for more random flow.
One pointed at water surface and one facing your live rock or against your glass imo

this might sound silly, but is it possible to overflow?

You can never have enough flow when LR is concerned but you need to think about the fish and coral.
You don't want fish pinned to the glass and different coral like different amounts of flow which is why it is better to have a couple of ph to give a random amount of flow.
