Orange Stripe On Rainbow Fish

I have two turquoise rainbows. I think one is a male (larger and colorful) and the other female (smaller and dull color). Every once in a while the male displays an orange stripe down the middle of his head, from dorsal fin to mouth. Does anyone know what this means? Stress? Ready to mate? Something else?
