I have noticed that Platys tend to run a bit fat. I think that is just the way they are built. However, your platy does have a slight silver sheen on her tummy. Has she been pregnant before? My platy has kept her silver sheen even after her birth, but if she hasn't given birth before, she could be pregnant.

She’s never given birth before, in fact we had only recently figured out she was even a girl ??‍ Her sides seem almost stretched with the white/silver bits

alright so i would watch her closely, if she gets fatter and fatter, then she is most likely pregnant. if she stays like this, she might just be a little fat!

If there are males in the tank, she is pregnant. She even looks pregnant, just look at her eye
