Should you let the water just "discolor" slightly, or turn a pale yellow or do you want it to be a dark orange?

Depends on your own preference. Probably the darker the better, but I'd generally just make it go a lightish yellow to start with.

if i was brewing to make an extract (to be mixed with regular aged water) i would make it pretty dark since less would need to be added thus extending usage.

My brew is really dark... wondering how what color I should try to acheive in the tank itself.
